About the Author
Nicole Bermensolo founded Kyotofu Bakery in 2006, one of the most popular bakeries in New York City. As business grew, Nicole closed the bakery in order to focus exclusively on wholesale operation. She currently runs Kyotofu and Hana Kitchens, selling her products nationwide. Nicole lives in New York City.

A fantastic Book with all of Kyotofus greatest Hits

Kyotofu was a very unique Japanese desert bar in NYC that closed down. They were known for gluten free and vegan desserts using traditional Japanese ingredients. They later shut down their restaurant to focus selling their desserts to large grocery chains and then later mysteriously shut down all operations. For those who miss their desserts will be very pleased with the receipes in this book- they are true to the ones from the restaurant and in stores. They have two types of the matcha fudge and several creations of their muffins and gluten free muffins. They have also included their famous miso brownies. Many of these are super easy to make however it's best to be near a Asian grocer to get majority of the main ingredients.
